Fruits and vegetables steal the show in our kitchen

Many people think about how food tastes and looks. Me too and I like to add an extra dimension and think about how food makes us feel. And you know what I realized, usually it's the vegetables, fruits and herbs that make us feel good and have great benefits for our health.
In the lead
Really fresh fruits and vegetables in all colors are always first for me, coupled with really good herbs and healthy oils. I am immensely fond of the culinary and wellness possibilities of fruits and vegetables and I transfer them to the starring role of my creations. Many of my dishes feature fruit or vegetables. We'll do some more protein, I love my meat, I love my fish, but we're just eating less and better quality, giving the veggies a chance to shine.
A simple ingredient
One of my concepts is that we take one simple ingredient and serve it four ways. We've just successfully done that with white asparagus, now we're coming with strawberries and then tomatoes. Strawberries in the soup, in the starter, main course and dessert. Strawberries in the soup? Wait until you see the menu soon. So I select a simple ingredient and find four creative ways to serve them. For me, it's about making the fruits and vegetables the stars of the show. Also in my bakery, where we try to make healthier desserts with less sugar and fat, with fruit in the lead. I am currently working on a cherry-based dessert buffet.
Health is our first focus
We would like to work around health and create a balanced offer with more natural, organic and plant-based products. When we are healthy, we also feel good. And that's the dimension I want to add to Jolliette's kitchen.
